Abstract

Cakar ayam is one of the Malay traditional cookies that are made from sliced sweet potatoes deep-fried in the coconut candy. In current practice of moulding the cookies, the fried sweet potatoes are moulded using traditional manual tools, which are inefficient and less productive for the mass production purposes. The importance of this project, which is collaborated with SME industry, is to define the appropriate design parameter for moulding process where current practice of moulding using traditional manual tools are inconsistent and difficult to control. Thus, in this research, the new design of automated moulding system is developed. The machine could desiccate the oily particles properly from the cookies before packing and increases the bonding action of material without affecting the properties of material. As a result the machine helps the SME industry to increase the efficiency and productivity of these traditional cookies in mass production.
